Pork Adobo Recipe

Ingredients (serves eight):

Type of preparation - Adobo/Marinade
Preparation time - 20 min
Cook time - 30 min

2-1/4 lbs of pork meat (shanks or tenderloin)
2 Rocoto peppers
1 cup of Chicha de Jora
2 sweet potatoes
5 allspice whole
4 red onions

2 tbsp. of oil
Salt to one's taste
Fresh oregano
1 tbs aji panca powder or paste

  • Cut the pork meat in eight big pieces.
  • Cut 1 rocoto pepper in medium pieces
  • Marinate the meat overnight with the aji panca, rocoto, cumin, a branch of oregano, and rocoto pieces.
The next day:
  • Cook the marinade and meat in a pot for 15-20 minutes.
  • Next add the red onions cut into long strips along with the allspice, the chicha de jora, salt, and an entire crushed rocoto, removed after 5 minutes (optional - for adding hot spicy flavor)
  • Boil the sweet potatoes in water (or steam them) and then peel them. Puree one and add it to the pot to thicken it; cut the other one into slices to go with the adobo.
  • Cook the rice with a bit of garlic previously chopped and fried. Taste the sauce and add salt if needed.
Serve the adobo along with rice and sliced sweet potatoes. Sprinkle fresh chopped oregano over the adobo.
