Peruvian food recipes include just about everything you could
imagine... but with a flavor unique to Peru.
Soups are a highlight of any complete Peruvian main meal, or "almuerzo"
but can be eaten at any time of the day.
Recipes from Lima, Peru's
capital, have earned it the title of the Cuisine Capital of the Western
Hemisphere, so certainly its soups are something delectable.
But the North Coast, the Andes towns, the South Coast, and the Selva
(jungle region) each have their own soups and flavors.
Here are some of the Peru Soups that you will definitely want to try.

1 lb of shrimp
1 lb of fried fish
fillet
1 tablespoons yellow
pepper (medium hot)
1-1/2 tomatoes, chopped
1-1/2 chopped onions
3 tablespoons
minced garlic
2 diced carrots
1 lb of yellow potatoes
1/2 cup of kidney beans
1/2 cup of diced pumpkin
2 ears of fresh corn, sliced with cob
1/4 cabbage cut in chunks
1 sprig of mint
1/2 cup rice
1/4 pounds of cheese
2 Eggs
1/2 cup evaporated milk
A pinch of oregano
Parboil shrimp in 2 quarts of water and reserve the broth. In
a deep pan, add a little oil and fry the onion and garlic, add
tomatoes, chopped mint and marigold.
Add the shrimp stock and bring to boil. Then add the
vegetables and rice.
Leave it simmering until everything is tender.
Finally add the cheese (cut into large pieces), beaten eggs, shrimp,
oregano, pepper and evaporated milk (avoid boiling). Just
before serving add the fried fish.
