Quick Easy Cookie Recipes from Peru - Alfajores de Maicena (Cornstarch Cookies)


Although the name translated to English doesn't sound that appealing, try these delicious double-stuffed cookies!

1 1/4 cup cornstarch (corn starch)
1/2 cup flour
2 teaspoons baking powder
1/4 cup powdered sugar
2 egg yolks
1 teaspoon lemon or orange zest
1 to 2 tablespoons milk (if necessary)
3/4 to 1 cup of caramel (called manjar) filling
3 tablespoons butter or margarine


Sift the cornstarch with the flour and baking powder.

Beat butter and powdered sugar until creamy and add yolks, one by one, while still beating. Then add the cornstarch mixture and the grated lemon or orange.

Turn this dough out onto a flat surface and use your hands to form it into one large ball. Cover with a cloth and let stand 20 minutes. If mixture is too dry, add a little milk. Sprinkle the board liberally with flour and roll out the cookie dough to approximately 1/8 inch thick. Cut the dough into circles to form the individual alfajores, about 2-1/2 inches in diameter.

Place on a greased and floured baking sheet.

Bake in oven at medium heat, about 350 ° F, for 30 minutes or until edges are starting to brown. The centers must be white. Remove from oven and cool.

Once cooled take the cookie, generously spread the caramel over it, and cover with another cookie.
