Cocada - Chewy Coconut Cookies from Peru
Serves 101 fresh coconut Molasses 1 cup 1 cup sugar 1 can evaporated milk 10 drops vanilla essence After removing the coconut water, peel and grate the fruit. Then we simmer coconut water, grated coconut, sugar and molasses, and let boil for a few minutes until it becomes slightly thick. Then add milk and vanilla. Simmer it and stir it until it gets to a very thick point. Finally, we remove it from the heat and, with a spoon, small portions are served on a platter until they cool. Submitted by Sabores Del Peru
